Abstract
Food handler hygiene and sanitation play an important role in the smooth running
of the production process because workers are planners, implementers and managers in
organizing food and protecting the health of patients in hospitals from diseases caused by
food contamination. Knowledge support affects handlers in implementing food hygiene and
sanitation. In reality, the results of infection control monitoring in several hospitals, food
hygiene and sanitation are still lacking and contaminated with disease-transmitting
microorganisms. This study aims to determine the relationship between knowledge and
food hygiene and sanitation in food handlers at the Nutrition Installation of Waled
Hospital, Cirebon Regency.
This study design uses a cross-sectional approach. The instruments used are
questionnaires and observations. The number of samples is 30 food handlers. This study
was conducted in the Nutrition Installation area of Waled Hospital. The sampling technique
in this study was total sampling using univariate and bivariate analysis with the chi-square
test.
From the results of statistical tests using the chi-square test by looking at the fisher
cell; s exact test, the p-value = 0.018 ≤ 0.05 was obtained. This indicates that H0 is rejected
and Ha is accepted,showing a significant relationship between knowledge and food hygiene
and sanitation among food handlers at the Nutrition Installation of Waled Hospital,
Cirebon Regency.
The results of this study are expected to encourage the improvement of food
handlers' knowledge, thereby leading to better hygiene and sanitation practices.
