Abstract

Sanitation of Food Management Places (TPP) is an activity carried out to prevent and
control risk factors for contamination of food, both from food ingredients, places and
equipment so that food is safe to consume in businesses providing ready-to-eat processed
food.
The type of research used in this research was a quantitative method with an
observational design. The aim of this research was to determine the relationship of
sanitation in food management places (TPP) and cockroach density in food management
places (TPP) at the Cirebon Port Area of Bandung Class I Health Quarantine Center,
working area of Cirebon. The population in this study was 30 Food Management Places
(TPP) in the Cirebon Port area. The samples in this research were taken using a total
sampling technique of 30 Food Management Places (TPP). The data analysis used was
univariate data analysis and bivariate analysis using the chi square test.
The results of this research showed that the majority of Food Management Place
(TPP) sanitation was in the category of not meeting the requirements at 21 locations (70%)
and the Food Management Place (TPP) sanitation was in the category of meeting the
requirements at 9 locations (30%). While most of the cockroach densities were in the low
category at 18 locations (60%), and the cockroach densities were in the high category at 12
locations (40%). Bivariate results using the chi square test showed a p value of 0.004 which
is smaller than α = 0.05. This result showed that H0 was rejected, which means there was a
relationship of Sanitation of Food Management Places (TPP) to Cockroach Density in Food
Management Places (TPP) at the Cirebon Port Area, Bandung Class I Health Quarantine
Center, Cirebon Working Area.
It is recommended that the agency makes schedule outreach activities related to the
sanitation in food management areas and routinely carry out integrated vector monitoring
and control.
