Abstract

Seeing the poor sanitary conditions of food stalls scattered in the Bima Stadium
area of Cirebon City, many food stalls are located close to pollutant sources, do
not pay attention to the condition of their open and impermeable trash cans,
improper washing of equipment, unavailability of fly prevention facilities and
temperature and humidity conditions that support the breeding of flies, thus
causing flies to land on food stalls.
This type of research is quantitative. The sample in this study were food stalls in
the Bima Stadium area of Cirebon City in 2023, totaling 35 respondents. The
sampling technique used total sampling with the observation sheet research
instrument. Statistical tests using the chi square test and data analyzed univariate
and bivariate.
The results of the researcher's analysis of 35 respondents showed that most of the
hygiene sanitation of food stalls in the Bima Stadium area of Cirebon City was in
the unqualified category as many as 27 food stalls with a percentage (77.1%) and
qualified as many as 8 food stalls with a percentage (22.9%).
Food stall owners should increase awareness and understanding of sanitary
hygiene and provide adequate facilities. Workers should be properly trained to
implement proper hygiene standards. Relevant authorities should provide
education, guidance and regular inspections. Meanwhile, consumers also play a
role in providing feedback and choosing food stalls that maintain good sanitary
hygiene quality.
